Why this coffee is a little different
This coffee comes from Volcán Azul in Costa Rica's renowned West Valley, on the slopes of the Poás Volcano. Grown at 1,600 metres above sea level, the combination of volcanic soils, cool temperatures and high elevations creates ideal conditions for producing coffees with exceptional sweetness, balance and complexity.
What makes this lot particularly distinctive is its anaerobic natural processing. Whole cherries undergo a carefully controlled oxygen-free fermentation using the farm's native yeasts before being slowly dried. This meticulous approach enhances fruit intensity and sweetness while preserving the clean structure and clarity that make Costa Rican coffees so highly regarded.
The result is a coffee that showcases both innovative processing and the unique character of one of Central America's most celebrated coffee-growing regions.
How to brew it
This coffee responds particularly well to a slightly coarser grind and a higher dose than you might normally use. These small adjustments help highlight its vibrant fruit character while enhancing sweetness, body and overall intensity. As a starting point, try grinding a little coarser than usual and increasing your dose by 1–2 grams, then adjust to taste.
