Why your coffee tastes bitter (and drying)

Bitterness can be normal. The problem is bitter plus drying, where your tongue and gums feel rough on the finish.

Most of the time, that is over extraction, or uneven extraction where some of the coffee is over extracted.

Quick diagnosis

  • Bitter and drying: usually over extraction.

  • Bitter plus sharp at the same time: often uneven extraction.

  • Bitter and sludgy: often too many fines (common in plunger).

What to change first

Make one change, then retaste.

  1. Grind slightly coarser
    Small steps. If you jump too far, the cup can become hollow.

  2. Reduce agitation on filter brews
    Aggressive stirring, swirling, or very fast pouring can push extraction up and pull fines into the cup.

  3. Rein in time
    If your brew time is running long compared to your usual, that is a strong clue.

Fixes by brew method

Espresso

  • First move: grind slightly coarser.

  • Keep dose and yield stable while you test.

  • If the shot is both bitter and sour, improve distribution and tamp consistency first.

V60 pour over

  • First move: grind coarser.

  • Pour more gently and reduce swirling or stirring.

  • Keep ratio the same for the test.

AeroPress

  • First move: grind slightly coarser.

  • Second move: shorten steep time a little, or reduce stirring.

Plunger

  • First move: grind coarser.

  • Skim the crust and floating fines before plunging.

  • Decant immediately after plunging.

Moka pot

Burnt bitterness on stovetop is usually heat management.

  • Use hot water in the base.

  • Keep heat low.

  • Stop the brew when the stream turns pale and starts to sputter, then cool the base.

  • Grind too fine

  • Brew time too long

  • Too much agitation

  • Overheating moka pot

  • Espresso channeling and uneven extraction
